Risk of eating raw vegetable

Viewed from nutrition, raw vegetable do contain more nutrients than cooked vegetable. The risk of contaminated raw vegetable from pesticides or harmful bacteria is very high.
According Prof.Dr.Ir. Made Astawan, food technologists and nutrition of IPB in various nutrition content of his book Food, pesticide residues are often still left in the vegetables until several days after spraying, especially during drought because farmers should not harvest the vegetables after spraying pesticides.

Examples of pathogenic bacteria from feces are Escherichia coli can cause diarrhea, Salmonella typhi and Salmonella paratyphi cause typhoid fever. Salmonella can also cause stomach upset, with symptoms of diarrhea, headache, vomiting, and fever.
Several types of foodstuffs containing natural toxic compounds, such as saponins in soybean, peanut, spinach, and asparagus, goitrogen (cabbage and radish), cyanide (cassava leaves), solanine (potatoes), and others. These toxic compounds can only be eliminated through the process of washing and cooking with the right temperature.
Although so far not reported any cases of poisoning or the person who died of consuming raw vegetables, but it’s worth paying more attention to our intake of food security.
